Bottle-conditioned beer is similar to soda carbonation. The addition of new sugars and yeast encourages more fermentation in the bottle. The CO2 that is released is absorbed back into the liquid. As a result, bottle-conditioned beers have a yeasty or estery flavor profile. Hence, the resulting beer may have a different flavor from a freshly-tapped one.
